Highlights We use response surface analysis to optimize chia oil extraction employing a screw press. The parameters considered were: seed moisture, restriction die, screw press speed and barrel temperature. The response variables were: oil yield and oil quality indicators. Oil yield can be enhanced by adjusting seed moisture content, restriction die and screw press speed.
