The same year, olive oil production in Lebanon reached 30,000 tons per year [2] where the majority of the extraction techniques are the standard mechanical three-phase extraction presses [3,4].
Based on these measurements, the PEF technology allowed us to improve the oil extraction yield by 13.3% compared to the control. Correspondingly, the PEF olive oil had higher concentrations of polyphenols, phytosterols, and total tocopherols than the control olive oil did (11.5%, 9.9%, and 15% higher, respectively).
